Nourishing Traditions – Chicken Broth Recipe

Having just returned from the Wise Traditions Conference I thought I would recreate some of the yummy foods I sampled there.

The Conference embraced the nourishing traditions and origins of food and there are few foods as nourishing and healing as bone broth. So here it is the elixir of life recipe!

1 Chicken Carcass
1 onion
1 carrot
1 stick of celery
2 cloves of garlic
Fresh or dried herbs (I used rosemary and thyme)
5 whole peppercorns
A pinch of salt

Peel the onion and garlic
Place the chicken carcass in a slow cooker or pan
Add the whole onion, carrot, herbs, garlic and seasoning
Cover the bones and veg with freshly boiled water
Cook on a low heat setting for as long as possible (8 to 8 hours is ideal)
Use for the base of soups, stews, casseroles and gravies
Pout into an ice cube tray to freeze and use when required






and look at the amount of chicken I was left with! See how I made a chicken curry for four people with the leftover chicken form the carcass!
