Last night I did my usual end of week ready steady cook challenge and rummaged in my near empty fridge to see what I could russle up. I found a couple of sticks of celery, a pice of rather sorry looking cabbage and half an onion and some carrots.
Here’s what I did:
a little piece of cabbage
a little piece of onion
2 sticks celery
a few walnuts salvaged from a mixed bag
Finely slice the cabbage, onion and celery and place in a dish
Grate the carrot (but not your thumb like I did)
Chop the walnuts
Add to the dish with a couple of blobs of mayo
Mix with your hands (or a spoon if you’re now nursing a bleeding thumb like me)
The perfect accompaniment to last night’s fish and chips!
