Ok the heat is on! Now that I’ve dragged out the chicken meals, I’m on a ready steady cook mission!
Do you ever get bored with eating just plain smoked mackerel? I always like the first one and then after that the novelty wears off, which doesn’t stand us in good stead to reduce food wastage…. well keep reading and you’ll end up wanting to eat mackerel every day of the week!
So this is what I started out with – a normal common, bog standard pack of mackerel fillets costing £2.69
3 out of 5 of those mackerel filets made 2 x meals that looked like this one below, one of which was consumed last night and the other tonight – YUM YUM!
The trick is to make whatever you cook so damn tasty you don’t mind eating it 2 days in a row!
Here’s the recipe;
3 small mackerel filets
2 teaspoons capers
1 tablespoon chopped fresh parsley
1 teaspoon horseradish sauce
1/2 sweet potato
1 small potato
Peel and chop the potatoes into smallish piece and boil until soft
Meanwhile take the skins off the filets and mash them with a fork
Mash the potato with a little butter (I don’t add liquid because it becomes too soft to use without breadcrumbs)
Add the mackerel to the potato mix and the rest of the ingredients.
Shape into 4 patties
Fry them in a little rapeseed oil until cooked through
Serve with a lovely crisp salad and lemon wedges
My recipe makes 4 patties that’s 2 meals costing about £1.50 each if I include the salad – bargain!
