Cheap as chips fish n chips (and healthier too!)

Cost £2.50

1 small sweet potato
3 mini smoked mackerel fillets (or one large one)
a drizzle of rapeseed oil
a scatter of thyme (or rosemary, or whatever herb in the pantry)

For the tartare sauce
1 tablespoon mayonnaise
1 teaspoon chopped capers

Peel and slice the sweet potato
Place on a baking tray
Drizzle over oil, salt and pepper and thyme
Bake for 10 minutes on about 175
Add the mackerel and bake for another 10 minutes

Make up the tartare sauce and serve with mixed leaves and wild garlic pesto (if you’ve still got some left!) or lashings of spring veg
