Autumn Delights – Squash and butter bean tray roast

I recently saw this recipe in Hugh Fearnley Whittingstall’s Light and Easy book

It’s a delicious one for Autumn and ever so easy to make all you need is:
A squash (which is deliciously seasonal)
2 red onions
a bulb of garlic
a few sprigs of sage
2 tins or cartons of butterbeans (I used a combo of butterbeans and cannellini beans)

Peel and chop the pumpkin or squash into small chunks
Chop the onions keeping the root on to hold them together
Peel the skins off the garlic bulbs
Place all above ingredients onto your oven roasting tray
Drizzle olive oil over


Cover tray with foil and place in oven at approx 175 degrees for 30 minutes
Take off the foil and replace in the oven for another 15 minutes
Add the beans and cook for a further 15 minutes
Add chopped sage a few minutes before serving
