Meatballs for one on Valentine’s Day – who said romance was dead?!

I’ve just feasted on a yummy, hearty dish of lamb meatballs in tomato sauce by candle light – what better way is there to spend Valentines Day? (other than Hugh Jackman sitting opposite me perhaps)

This will serve 2 love birds or 2 meals for 1 love bird

Here it is:
350g organic lamb mince
Half an egg whisked
1 teaspoon dried rosemary
1 tin of tomatoes
1 onion
1 stick celery
2 cloves garlic
1/2 teaspoon smoked paprika
salt and pepper to taste

Method:
Fry the onions, celery and garlic for about 5 minutes until transparent
Add the tomatoes, paprika and half the rosemary, put the lid on and leave until the meatballs are ready to transfer
Add the rest of the rosemary to the mince as well as the egg and seasoning
Shape into balls (I made 8 out of this amount of mince)
Fry the meatballs in a pan (no fat needed as lamb is quite fatty)
Transfer the meatballs to the tomato sauce and place in the oven for 30 minutes on 150 or continue to cook on the stove for about 15 – 20

Best served with steamed greens and buttery mash – yum yum!
